Best-of-the-West Slow Cooker Chili

This tasty chilli is delicious served with corn chips as a snack or as a hearty meal all on its own.
Cook Time: 8-10 hours.
Serves: 8

 

Imperial Metric
YOU WILL NEED
ground beef, browned and drained 2 lbs 0.9 kg
2 cans kidney beans, drained and rinsed 15oz 0.44 lt
1 can whole tomatoes, drained and chopped 28 oz
0.82 lt
chilli powder 4 tbsp 4 tbsp
clove garlic, minced 1

cumin powder 1 1/2 tsp 1 1/2 tsp
salt 2 tsp 2 tsp
ground pepper 1 tbsp 1 tbsp
hot pepper sauce ½ tsp ½ tsp
olive oil 1 tbsp 1 tbsp
water ½ cup 0.23 lt

Directions

  1. Combine all ingredients in the slow cooker and mix thoroughly. Cook on low 8-10 hours.
  2. Serve with a selection of toppings including grated Cheddar cheese, chopped tomatoes and sour cream.

Bruschetta Pasta

If your family likes bruschetta, they are going to love this quick and easy pasta. Serve with our Caesar original or Caesar vinaigrette.
Preparation Time: 15 minutes
Cooking Time: 10 minutes
Serves: 4

 

Imperial Metric
YOU WILL NEED
chopped, ripe plum tomatoes 3 cups 750 ml
diced sweet onions ½ cup 125 ml
sliced black olives ¼ cup 50 ml
grated Parmesan cheese 3 tbsp 45 ml
olive oil 2 tbsp 25 ml
balsamic vinegar 22 ml
minced garlic 1½ tsp 7 ml
Dijon mustard 1 tsp 5 ml
hot chilli flakes 1 tsp 5 ml
goat cheese, crumbled 2 oz 60 g
Rigatoni 10 oz. 250 g
chopped fresh basil cup 125 ml

Directions

  1. In a large bowl, stir together tomatoes, onions, olives, Parmesan, olive oil, vinegar, garlic, mustard, chilli flakes, basil and goat cheese.
  2. In a large pot of boiling water, cook Rigatoni according to package directions. Drain. Add tomato mixture; toss to coat. Serve warm.

Sweet Maple Carrots

Sweet Maple Carrots

Even kids are going to love these soft, sweet and buttery carrots. They make the perfect colourful accompaniment to any meal.
Serves: 6 - 8

Imperial Metric
YOU WILL NEED
carrots, peel and cut into 1/2" (1 cm) chunks 1/2 lb 700g
water 1/3 cup 75 ml
unsalted butter 3 tbsp 45 ml
pure maple syrup 2 tbsp 30 ml
dark brown sugar 1 tbsp 15 ml

Directions

  1. Put all ingredients into a large, Dutch oven or heavy skillet and bring to a boil.
  2. Reduce heat to medium. Cover and simmer until carrots are tender-crisp - approx 8 minutes.
  3. Uncover and continue cooking and stirring occasionally until liquid is reduced to a glaze - approx 5 minutes.
  4. Season with salt and pepper.

Cranberry Chicken

Looks gorgeous and tastes even better the next day!
If you like it really saucy just make 1½ x the sauce. FYI - one pkg of frozen cranberries is 3 cups (750mL).
Serves: 6 - 8

YOU WILL NEED
brown sugar 1/2 cup 125 ml
ketchup 1 cup 250 ml
Dijon mustard 1 tbsp 15 ml
Worchestershire sauce 2 tbsp 30 ml
frozen cranberries (use Oceanspray only) 3 cups 750 ml
butter or margarine 2 tbsp 30 ml
2 onions, diced

8 pieces of skinless, bone-in chicken

Directions

  1. Preheat oven to 450F (230C).
  2. Combine all ingredients for sauce and set aside.
  3. Place margarine in a 9" x 13" (23cm x 33cm) Pyrex® baking dish and place in oven until bubbling - about 1 minute.
  4. Add onions into bubbling margarine and mix. Return to oven and let onions cook for 10-15 minutes, stirring occasionally until lightly browned.
  5. Push onions to the side of the dish and place chicken piece in a single layer in the dish (not on top of the onions).
  6. Reduce oven heat to 375F (190C) and return dish to oven and cook for 30 minutes.
  7. Remove onions from the dish and stir into prepared sauce. Pour out any liquid in the bottom of the chicken dish. Pour sauce over chicken and return to oven.
  8. Cook 30-40 minutes until bubbly.

Southwest Ranch Taco Salad

My kids love making this for their friends.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 6

YOU WILL NEED
1 ET TU Select Southwest Ranch salad kit

1 head of romaine lettuce washed, dried and cut or a 10 oz. bag of pre washed and cut romaine

ground beef 1 lb 500 g
1 package Taco Seasoning

8 cherry tomatoes halved or one large tomato diced

shredded cheddar cheese 1 cup 4 oz.

Directions

  1. Prepare ground beef according to directions on seasoning package.
  2. Place romaine in a large salad bowl. Add contents of salad kit, along with seasoned beef, tomatoes and cheese.
  3. Mix thoroughly, divide among 6 plates and serve immediately.
